The Maghreb

The Maghreb is the region lying between the Mediterranean and the Sahara. It's the interface between Europe and Africa and is criss-crossed by multiple historic trade routes as well as being subject to the influence of many indigenous cultures and their conquerors - especially the Arabs, Ottomans, and French. The spice palette is generally sweet and mild, with the notable exception of the fiery heat delivered by Tunisia's Harissa Paste.
