Southern Africa

Influenced by local, native spices as well as European traders and colonisers and migrant workers from Asia.

South Africa and Mozambique demonstrate the most varied influences - the Dutch imported many ideas from their colonies in Indonesia while the Portuguese brought Piri-Piri Chilli blends and the British influence brought in labourers from from all corners of the empire but particularly India.

In Botswana and Zimbabwe, both landlocked, the trade influences are more muted, resulting in a much gentler spice palette
