West Africa

Whilst West Africa is a region of much diversity, in terms of landscape, peoples, and cuisines, it's culinary influence comes from two primary sources, French and British Colonisation. These influences are strong enough that the native spices , including Iru - the fermented beans of the locust tree - are pushed firmly into second place.
