Sweet and warming

Serves 4

This is a simple dish to warm you in the winter. Serve as is for a light but warming meal or add some rice or pasta to fill you up.

 

 

 

Ingredients

1 tbsp Olive Oil

1 Medium Onion - chopped

1 Red Pepper - diced

2 tsp ground cinnamon

1 tsp freshly ground black pepper

1 tbsp smoked paprika

4 Pork Loin steaks or medallions - cut into 1 cm cubes

1 Apple, cored and cut into 1cm cubes

1 400g tin Red Kidney Beans, drained

500ml Pork stock (1 stock cube dissolved in 500 ml of boiling water)

1 tsp Dill

 

Method

  1. Heat the oil in a pan and add the Onion and Pepper. Fry for a minute or two to soften them
  2. Add the spices and fry for a few seconds
  3. Add the Pork stir well to coat with the spice mix then fry for 5 minutes until browned
  4. Add the diced apple, kidney beans, stock and dill
  5. Simmer for 25-30 minutes allowing the sauce to reduce a little but not to thicken too much
  6. Serve with your choice of accompaniments.
