Serves 4

Inspired by the subtle spice palette of Southern Europe, this is a really easy dish to prepare. It all bakes in one dish leaving you plenty of time to socialise with your guests or just kick back and relax (with some ouzo, maybe?)

 

 

 

Ingredients

250g Potatoes

1 Medium Onion

2 Cloves Garlic

10 cm Cinnamon Stick

1/2 tsp freshly ground black pepper

1 tsp ground coriander

100g Feta Cheese

4 Pork Loin Steaks (Or medallions)

1tbsp Ground Paprika

1tbsp dried parsley

 

Method

  1. Pre-Heat an oven to 200 Degrees C (180 for Fan Assisted)
  2. Bring a pan of water to the boil
  3. Thinly slice the potatoes and cook them in the boiling water for 5 minutes. Be careful not to overcook them or they will start to break up.
  4. Layer the part cooked potatoes in the base of a large oven proof dish.
  5. Roughly chop the onion and tomatoes, crush the garlic. Add these to the dish along with the spices and crumbled feta, making sure that they are evenly mixed.
  6. Sprinkle the paprika and parsley on both sides of the Pork Steaks before arranging them on top of the Feta mix.
  7. Cover the dish with foil and bake for 40 minutes.
